Zucchini Mediterranean Quinoa Bowl

This Mediterranean dish is perfect if you are looking for a delicious light meal 🍃

Ingredients: 

1/2 cup of quinoa

10 Cherry tomato cut in half

1 zucchini cut in medium dice

A bunch of cilantro

2 tablespoons of olive oil

1/2 cup of "Zucchini & Cilantro With Cauliflower Soup"

Salt and pepper

 

Instructions: 

1. Cook quinoa according to package instructions. Once done, let it cool. 

2. Add the quinoa to a bowl and mix with tomato, zucchini and cilantro

3. Heat a saucepan and add the "Zucchini & Cilantro With Cauliflower Soup" with a little bit of olive oil and salt and pepper and cook for 5 min until the soup thickens.

4. Add the "Zucchini & Cilantro With Cauliflower Soup" to the Quinoa salad and enjoy
