Zucchini Mediterranean Quinoa Bowl

This mediterranean quinoa bowl is ideal for people that want to try a new flavor experience and get all the goodness of a plant based meal at the same time. 

Inspired by the freshness of the Mediterranean coussine, the unique flavor of the Zucchini & Cilantro with Cauliflower Soup combined with the filling quinoa makes this meal super tasty and refreshing. Ideal for people that want to eat delicious and eating low calorie meals at the same time. No more bloating or feeling heavy after lunch time! 

This recipe is so easy and fast to make it will take you 20 min or less to prepare but will keep you feeling light and amazing for a long time.

 

Ingredients: 

1/2 cup of quinoa

10 Cherry tomato cut in half

1 zucchini cut in medium dice

A bunch of cilantro

2 tablespoons of olive oil

1/2 cup of "Zucchini & Cilantro With Cauliflower Soup"

Salt and pepper

 

Instructions: 

1. Cook quinoa according to package instructions. Once done, let it cool. 

2. Add the quinoa to a bowl and mix with tomato, zucchini and cilantro

3. Heat a saucepan and add the "Zucchini & Cilantro With Cauliflower Soup" with a little bit of olive oil and salt and pepper and cook for 5 min until the soup thickens.

4. Add the "Zucchini & Cilantro With Cauliflower Soup" to the Quinoa salad and enjoy
